"A lot of what I do is illegal. I have to hide to serve moose meat, I have to hide to serve whale to my guests, I have to hide to serve seal. As First Nations people, we're still under the thumb of the government and it enrages me that I have to go underground to do my dinners. The only sanctuary I have is back on a reserve. When we look at the word Reconciliation, basically what it means is to make whole again. How are we going to do that? We do that by going back to our traditional foods. "
In 2018, Chef Rich Francis hosted the StoryHive documentary series Red Chef Revival where he travelled to Indigenous communities across Canada to learn about local food. He has discovered recipes that don’t exist in colonial history books, interpreting them in new and interesting ways. Francis is the owner of Aboriginal Culinary Concepts, a business he describes on his Facebook page as "a platform from Modern Aboriginal Cuisine." He is also a strong advocate for legalizing the use of traditional Indigenous proteins like moose and seal.
